This Strawberry Chia Seed Pudding is a creamy, naturally sweet treat made with blended fresh strawberries, chia seeds, honey or maple syrup for vegan, and a dairy-free coconut milk.
In a blender or food processor combine 1 cup of chopped strawberries, coconut milk, vanilla extract, and honey. Blend until smooth.
Pour into a bowl and combine with the chia seeds. Mix until the seeds are evenly distributed. Cover and place in the fridge. Allow it to set for at least 3 hours, or overnight.
Remove the pudding from the fridge and stir before serving.
To create the parfaits, split the remaining chopped strawberries between the 2 jars and drizzle with honey or maple syrup. Fill the rest of each jar with the pudding. Top with strawberries, and enjoy!
Notes
Substitute honey for maple syrup or agave for vegan option.
Swap out the strawberries for your favorite fruit: blueberries, blackberries, raspberries are delicious too.
Top with fresh berries, nuts, or coconut flakes for extra texture and flavor!
