Plant Based Strawberry Chia Seed Pudding
This Plant-Based Strawberry Chia Seed Pudding is a creamy, naturally sweet treat made with blended fresh strawberries, chia seeds, honey or maple syrup for vegan, and a dairy-free coconut milk.

All you’ll need for this delicious treat are a handful of basic ingredients:

- vanilla extract

Substitutions
- Substitute honey for maple syrup or agave for vegan option.
- Swap out the strawberries for your favorite fruit: blueberries, blackberries, raspberries are delicious too.
- Top with fresh berries, nuts, or coconut flakes for extra texture and flavor!
Instructions
In a blender or food processor combine 1 cup of chopped strawberries, coconut milk,vanilla extract, and honey. Blend until smooth.
Pour into a bowl and combine with the chia seeds. Mix until the seeds are evenly distributed.



Cover and place in the fridge. Allow it to set for at least 3 hours, or overnight. Remove the pudding from the fridge and stir before serving.


To create the parfaits, split the remaining chopped strawberries between the 2 jars and drizzle with honey. Fill the rest of each jar with the pudding. Top with strawberries, and enjoy!
How to Store Leftovers
Store in the refrigerator overnight or up to 2 days. For best results, this recipe should be enjoyed within 1-2 days.
Store in an airtight storage container.
