Scrub the potatoes to remove any dirt, cut into wedges. Soak the potato wedges in cold water for 15 minutes.
While the potatoes are soaking, make the malt vinegar aioli by whisking together the mayo, malt vinegar, garlic powder, and lemon juice. Place in the fridge until ready to serve.
Pat the potato wedges dry and move them to a large mixing bowl.
Add the olive oil, garlic salt, rosemary, oregano, and dried parsley to the potato wedges. Toss well to coat.
Transfer the seasoned wedges to the basket of an air fryer.
Fry at 390°F for 20 minutes, being sure to stir the wedges every 5 minutes.
Allow the finished potato wedges to cool slightly before serving them alongside your malt vinegar aioli. Garnish with coarse sea salt and enjoy!
Notes
These potato wedges are a bit on the softer side. If you like your wedges crispier, air fry them for 30 minutes instead of 20.
For a more intense flavor, be sure to let the malt vinegar aioli chill in the fridge for at least 20 minutes prior to serving.
You can easily customize what spices you toss these potato wedges in. Try adding basil, onion powder, crushed red pepper, thyme, or paprika.
These garlic herb potato wedges pair well with almost any dipping sauce. Try dipping them in a sriracha mayo, smoky barbecue, spicy ketchup, garlic parmesan mayo, or buffalo ranch.
No air fryer? No problem! You can easily make these potato wedges in the oven. Cut, soak, and season the wedges as normal. Spread the potato wedges across the surface of a parchment-lined baking tray. Bake in a 400°F oven for 30 minutes or until crispy on the outside and fork tender in the middle.
