A scrumptious and savory smoked breakfast skillet with sausage and potatoes. This delicious Traeger skillet makes a great summer time meal for breakfast, lunch, or dinner!
Preheat Traeger grill to 350 degrees F with lid closed for about 15-20 minutes.
In a large cast iron skillet, either over a stovetop or on the preheated grill, heat up butter over low-medium heat. Add chopped onion and potato, sprinkle with salt. Sauté until potatoes are becoming soft. Remove from skillet and set aside.
Add the pork sausage to the skillet and cook until no longer pink.
While the pork is cooking, prepare the egg mixture. In a large bowl, whisk the eggs, heavy cream, shredded cheese, and minced garlic.
Once the pork sausage is cooked, remove from heat and return the potatoes/onion mixture to the skillet. Combine together.
Pour the egg mixture over top of the sausage and potatoes.
Place the skillet inside of the Traeger with lid closed and cook for about 40-45 minutes until the eggs are cooked through.

Notes
If you have regular ground pork sausage and not a breakfast blend, you can flavor it yourself. Use a blend of seasonings such as rosemary, sage, salt, pepper, garlic to give it a delicious flavor.Or try something already made like this breakfast blend. It is a favorite in our home!Bacon can also be used instead of sausage for a delicious smoky casserole dish.
