What Type of Pasta is Best?
I’ve made this pasta recipe for my family many times, using different types of pasta. My favorite to use is something thick and with a bit of texture.
In this parmesan and butter pasta recipe, I used cellentani pasta. A malfada is another great option.
Can You Refrigerate this Pasta?
This pasta is one that I would recommend serving right away. As with most pastas, I don’t usually recommend serving leftovers. They tend to become over cooked and mushy.
But I also don’t believe in wasting food!
If you have leftovers, you can store them in the refrigerator for a few days. To reheat, the best option would be to cook on a stovetop before using a microwave.
Sure, it might take a bit longer, but it would give you the best option for reheating. And best chance of preserving flavor.
Use a small amount of olive oil in the pan to help prevent sticking.
- 1 tablespoon quality extra virgin olive oil
- 1 tablespoon butter
- 1 cup fresh shredded Parmesan cheese
- 1/2 cup fresh shredded Romano cheese
- 1 large garlic clove, minced
- 1 pound pasta
- salt & pepper to taste
- Prepare your pasta according to package instructions. Don't forget to salt the pasta water!
- While the pasta is cooking, shred the cheeses and mince the garlic.
- When the pasta is on the last minute of cooking time, heat up the olive oil in a large skillet.
- Add in the garlic and saute just until flavor begins to come out. About 30 seconds or less. Be careful not to burn the garlic - it will become bitter. Remove from heat.
- Drain the pasta.
- Stir in the butter and toss in the pasta directly to the garlic oil. Lightly toss in the cheeses. I like to incorporate the cheese lightly so that there are big chunks of it scattered throughout. It makes for big bold flavorful bites.
- Salt & pepper to taste.
